Nutty Peaches and Greens

Often clients tell me that they have little time to eat healthy. They say that they don't know how to prepare or cook veggies, or that eating healthy is expensive. While I understand and sometimes feel the same way, it really doesn't take very long and you don't have to be a cook. Also, it's not really that expensive to add a little health to your meals. My Nutty Peaches and Greens is a simple recipe that ads some delicious fruit and veggies to your meal. Use it as a side or add some shrimp for a little more protein, and it's pretty much a meal. Arugula is a lot like spinach (minus the iron content), peaches are high in water, potassium, fiber, and vitamin A and C. The nuts help provide that rich, crunchy, and heart healthy spin on the meal. Top it with a little sea salt, which is lower in sodium, pepper, and splash in some extra virgin olive oil and lemon for your dressing. And PRESTO, you got yourself an easy-peasy salad or compliment to a meal. Enjoy!

Nutty Peaches and Greens Serves about 8

4 ripe peaches, dice

½ cup roasted peanuts, low sodium

1 bag of arugula (or other greens)

4 Tbsp extra virgin olive oil

2 Tbsp lemon juice

Sprinkle salt and pepper to taste

Directions: Dice ripe peaches into bite size, or to a size you prefer, and then add to a salad bowl. Next, add the bag of arugula, or other greens, the roasted peanuts, oil, lemon, salt and pepper, and mix well. Serve immediately, or allow your family or friends to serve themselves. If preparing the salad ahead of time, add the dressing just before serving to avoid wilting. Enjoy!
